INGREDIENTS
- 1 cup boiled and mashed potatoes
- 1/2 cup grated paneer
- 2 tbsp corn flour
- 1 tsp grated ginger
- 1 tsp grated garlic
- 1 tsp coriander powder
- 1 tsp cumin powder
- 1/2 tsp red chili powder
- Salt to taste
- 1/4 cup chopped cashews
- 1/4 cup raisins
- Olive oil for frying
- 1 onion, finely chopped
- 1 tomato, finely chopped
- 1/4 cup heavy cream
- 1 tsp garam masala
- 1 tsp dried fenugreek leaves
- Fresh coriander leaves for garnish
INSTRUCTIONS
Step 1: Prepare Kofta Mixture
Combine boiled mashed potatoes, grated paneer, corn flour, grated ginger, grated garlic, coriander powder, cumin powder, red chili powder, and salt in a large mixing bowl. Mix until well combined.
Step 2: Shape Kofta Balls
Take a small portion of the mixture and form it into round balls. Repeat with the remaining mixture.
Step 3: Fry Koftas
Heat olive oil in a frying pan over medium heat. Fry potato and paneer balls until golden brown. Remove and set aside.
Step 4: Sauté Onions
In a small saucepan, heat a tablespoon of olive oil. Add chopped onions and sauté until translucent.
Step 5: Cook Tomato Mixture
Add chopped tomatoes to the saucepan and cook until soft. Then, add heavy cream, garam masala, dried fenugreek leaves, and salt. Stir well and simmer for 2-3 minutes.
Step 6: Blend Mixture
Using a blender, blend the onion and tomato mixture into a smooth gravy.
Step 7: Simmer with Koftas
In the same frying pan, add the gravy and bring it to a boil. Add the fried potato and paneer balls, chopped cashews, and raisins. Simmer for another 5 minutes.
